As I have mentioned before, Hazel loves pancakes. Well she has been asking to make pumpkin ones again. I finally remembered to buy a can of cooked pumpkin so we could. Then when she asked to make them I was able to answer yes.
We pulled out the ingredients. We adapted the recipe in our Walt Disney's Mickey Mouse Cookbook that I have had since I was six. I love this book! We used one cup of whole wheat flour, two teaspoons baking powder, a half of a cup of almond meal, a half cup of oatmeal and a teaspoon of cinnamon and a dash of nutmeg. Hazel measured and mixed our dry ingredients!
Next we beat an egg--Hazel cracked it by herself and beat it! Then added one cup non-fat milk, one tablespoon olive oil and a can of cooked organic pumpkin. Again she mixed it for me. At this point I started heating the pan and sprayed it with a cooking spray.
Then we combined the two together and added one cup of frozen blueberries. We had fresh ones but I didn't see a reason to waste fresh ones by cooking them.
Next Hazel pulled her stool over to the stove and helped me scoop it into the pan. She didn't totally understand why we had to do it over the stove, but she did help with the first two batches.
Hazel claims these are her favorite pancakes. When I flip them over I press down on with the spatula to make sure the batter gets around the blueberries. I usually flip them twice and do this both times.

Blueberry Oatmeal Bars
On Saturday Hazel decided instead of playing outside in the gorgeous weather she wanted to bake cookies. She was persistent so I gave in. We looked through a few recipe books and decided on Bert's Best Blueberry Oatmeal Bars from C is for Cooking by Susan McQuillan, RD. The nice thing about this book is it gives the instructions that the kids should be able to do. Of course, Hazel wants to do all of it, but that is besides the point. Hazel insisted I wear her chef hat. She had it on with her matching apron, but I was too slow with the camera. Sorry!
Blueberry Oatmeal Bars (adapted from C is for Cooking by Susan McQuillan, RD)
Ingredients:
1 1/2 cups whole wheat flour (ok the recipe calls for all purpose, but I used whole wheat)
1 teaspoon ground cinnamon (now you know Hazel will be happy with this!)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup packed light brown sugar
1/2 cup granulated sugar
1/2 cup (1 stick) softened butter
1/2 cup vegetable oil (we used canola)
2 eggs
1 teaspoon vanilla
3 cups uncooked old-fashioned oats
2 cups blueberries (fresh or frozen)
1) Preheat oven to 350 degrees. Line a 13 x 9 inch baking pan with aluminum foil. Lightly spray the foil with a cooking spray.

2) KIDS: In a small bowl, mix together the flour, cinnamon, baking soda, and salt.

3) In mixer bowl, beat together brown sugar, granulated sugar and butter until fluffy. Beat in oil, eggs and vanilla. With wooden spoon, mix in the flour mixture until blended. Stir in oats and blueberries.

4) KIDS: Use a rubber spatula to spread the batter evenly in the prepared pan.
5) Bake until golden brown 30 to 35 minutes. Put pan on cooling rack. Once cool lift foil to remove from pan and then cut into 24 bars.
I found this neat site My Fitness Plan that gives you the nutritional breakdown from famous recipes including this one. (It may ask you to sign up but I just hit close and it gave me the information.) Then I used that information to calculate the Weight Watcher Points Plus and each bar is 4 points plus.
I would add walnuts next time to this recipe!! All of us enjoyed these and are still enjoying!!
Banana Walnut Blueberry Pancakes & First Class

Around this time we sprayed the griddle pan with a butter cooking spray and warmed the pan. Then we beat an egg and added one cup of milk, one tablespoon olive oil and the mashed bananas (2 pretty ripe bananas). Then we added this mixture to the dry ingredients and mixed it together. Then we stirred in one cup of frozen blueberries. Now it was time to cook.
And finally time to eat. We had them with some maple syrup!
After breakfast we needed to get ready for our first class at the Mass Audubon Ipswich River Wildlife Sanctuary. Every time we have tried to get into their toddler class it has been full. This last time April's was full but they put us in the May one, so off we went. Hazel loved it!

After class, we went out for some jumping in puddles and one of the boys showed Hazel the water bubbler. After some playing with it and experimenting and a little help from me, Hazel figured out how to drink from it.
Don't you love the look of satisfaction on her face! Her shirt is completely wet, but oh, well. Then one of the girls asked if they wanted to play hide and seek and off the kids were. Then they splashed in the puddles and then it was tag. Needless to say it was a fun morning.

Baking with Hazel again

I slept in (Thank You Steve!!), which was wonderful and Steve had already fed her some breakfast. But she was determined, so I pulled out a cookbook. It is a cookbook I bought awhile ago for Hazel when we were letting her watch a bit more television and she was so into Elmo. She still loves all the characters and loves the cookbook. The recipes are relatively healthy and very easy. They also mark the parts they consider kid friendly to do.

1 1/2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1 egg
2/3 cup packed light brown sugar
1/4 cup olive oil
1 cup canned pumpkin
1/2 cup non-fat plain Greek yogurt
1 cup uncooked oatmeal
1 cup blueberries (or you could use 1/2 cup of raisins or dried cranberries)
Well then I remembered the Paper Source and they were still open. Do you know the Paper Source? It is a great store. They have an on-line store as well at http://www.paper-source.com/. I never order on-line but I love wandering around and looking at all the great craft things. They are basically a great store for any paper craft and stationary. They have beautiful kits for paper flowers (see above) and wreaths as well as ones for kids. It is really a fun store. Well, I found some great scrapbook paper to make some of the wonderful crafts I have seen on this week's Sharing Saturday (there are already over 145 entries and they keep coming).

They are pretty similar. I think I will cut double the hearts and have Hazel do one while I do one.
Isn't that heart paper perfect? All I have to do is cut them out. Plus I have the stencil to make other sizes. Then the needle felting flower kit was on sale--half price and the clothespins were so cute. I thought I might use them with something from a couple weeks ago Sharing Saturday.

1/2 teaspoon baking soda
1/2 teaspoon cinnamon

1 egg
2/3 cup packed light brown sugar
1/4 cup olive oil
1 cup canned pumpkin
1/2 cup non-fat plain Greek yogurt
1 cup uncooked oatmeal

- Preheat the oven to 350 degrees F. Line or grease 18 muffin cups
- In a small bowl, stir together the flour, baking powder, baking soda, cinnamon and ginger.
- In a different small bowl, have child crack egg and take out any shells (if there are any). Then beat egg with a fork.
- In a large bowl stir together sugar and oil. Then add egg, pumpkin, and yogurt and mix until blended.
- Stir in the flour mixture and oatmeal.
- Gently stir in blueberries (or raisins or dried cranberries).
- Distribute batter into the muffin pans filling each to about 2/3.
- Bake for about 25 minutes. Cool on rack slightly and serve warm. Store in an air tight container for up to 3 days.

Baking, Crafting, and Relaxing
Wow, I'm so excited. My followers moved to over 100 yesterday. Thank you!! I feel so honored especially since most of my followers are not my family and friends I met elsewhere--not from Crafty Moms Share. Also we have 90+ posts shared at Sharing Saturday. It is still open, so please go check it out and share something with us. I am always amazed at everything and love to see what wonderful things people are up to. I often try some of them with Hazel as well.
So this weekend, we baked some muffins. We made Banana Blueberry Muffins since we had some overripe bananas to use up. Hazel is a great banana masher.
She also did most of the mixing and helped scoop them into the muffin tins.
Our recipe is pretty low fat and healthy!!
Banana Blueberry Muffins
1 1/2 cups whole wheat flour
1/2 cup sugar
1/2 cup oat bran or oatmeal
1/4 cup ground flax seed meal
2 teaspoons baking powder
1/2 cup non-fat milk
1 cup plain fat-free yogurt (I use Greek so it has extra protein)
1 egg
2-3 over ripe bananas, mashed
1 tablespoon olive oil
1 1/2 cups blueberries (fresh or frozen)
Preheat oven to 350 degrees F. Line a muffin pan with foil liners or spray with non-stick spray. (The muffins are moist and will stick to paper liners.)
Combine the dry ingredients in a medium bowl.
In large bowl beat egg and then add milk, yogurt, bananas and oil and mix. Then add dry ingredients and mix well. Then add blueberries and stir.
Scoop into the prepared muffin tin. Bake for 20 minutes and then cool on rack for 10 minutes before eating.
Makes about 18 muffins.
We also did a craft of sorts. I had been saving a Tropicana juice bottle. I love the shape and thought it would be a fun playhouse for some of Hazel's dolls. I asked Steve to cut a door in it. Then we glued some double folded bias tape around the cut so there wouldn't be any sharp edges. Then we moved Hazel's Caillou figures into it. I think Hazel and I may decorate it more, but it at least gave her a playhouse for the figures.

Play blueberries
We had a busy morning. Hazel and I made banana blueberry pancakes for breakfast and then it was off to Founder's Day, our town's celebration of when it was founded and basically all the schools and local organizations day to fundraise with raffles, games, and food. Hazel had a blast.
A simple "homemade" toy to make. Hazel loves blueberries and she loves playing with her kitchen toys. As I looked at an empty carton from blueberries I came up with this. Buy wooden unfinished beads (I bought two different sizes for variety) and paint them blue then put in a cardboard blueberry container.
To paint them I put them in a gallon plastic bag and poured some of Hazel's tempera paint. Then sealed the bag and shook and rubbed. Then dumped them onto wax paper to dry. Very easy and little mess. Try to make sure they aren't touching so you won't have any stick together.
We had a discussion about not eating them since they can be choking hazards for small children. I think I got it through her head that they cannot go in her mouth since they are pretend blueberries. Another easy kitchen craft is to buy the wooden eggs at a craft store (Michaels AC Moore, etc.) and put them in a cardboard egg carton. I saw this at Hazel's school and loved it. I saved an egg carton and put the eggs I had already bought for her in. I need to buy more to have a full dozen though. At the school she loved taking them out and putting them in.
