Around the World in 12 Dishes: Portugal

This month we are exploring Portugal for Around the World in 12 Dishes. I wrote an introduction to Portugal there, so I am going to get into how we explored the country. As always we took some books out of the library. Our favorites for Hazel getting understanding are:
  • Portugal by Kari Schuetz - an easy to understand overview of the country and culture


  • A New Life in an Old Village by Hélène Tremblay - one family's story about life in a Portugal village

  • The Little Horse of Seven Colors and Other Portuguese Folk Tales Retold by Patricia Tracy Lowe - folk tales with a few illustrations

I also spoke to a friend who is Portuguese American. She suggested making caldo verde and Portuguese sweet bread. Of course her memories of her grandmother making them did not include an actual recipe--more of take this and that and a little of this, so I looked for some recipes. For the caldo verde (green soup) we found a recipe in Jean Anderson's The Food of Portugal. Now I knew this was taking a chance since both Steve and Hazel do not like kale. There is discussion on line whether the greens should be kale or collard greens. Since I like kale better and have had the soup in a restaurant in an area with large Portuguese American population and it said kale and potato soup, I went for kale. Sometimes Steve will eat it in things, so I figured why not. I dragged a sick Hazel out to the store and of course everyone was shopping for Easter that morning. Ugh! So much for a quick trip. An employee in the meat department helped me pick out sausage since I don't like it usually. Hazel thought it was too bland, but did not tell me this until a few days later. She just didn't eat it. I thought it could use more salt (and I do not usually cook with salt at all and never add it) and did not like the sausage and Steve just didn't like it.

Green Soup or Caldo Verde
1 large yellow onion
1 large garlic clove
4 tablespoons olive oil
6 large Eastern potatoes
2 quarts cold water
6 ounces chourico, chorizo, pepperoni
2 1/2 teaspoons salt (do not cut this down!! I did and it was a mistake)
1/4 teaspoon freshly ground pepper
1 pound collards or kale

Finely chop the onion, garlic, potatoes and  kale. Thinly slice the sausage. Saute the onion in the garlic in 3 tablespoons of oil in a large heavy saucepan for 2 to 3 minutes. Add the potatoes and saute stirring constantly for 2 to 3 minutes until they begin to color. Add water and cover the pot. Boil gently over medium heat for 20 to 25 minutes until the potatoes are mushy.

Meanwhile fry the sausage in a heavy skillet over low heat for 10 to 12 minutes until most of the fat is out. Drain well and reserve.

When the potatoes are mushy, remove pan from heat and with a potato masher, mash potatoes in pan with soup mixture. Add the sausage, salt and pepper and return to heat. Cover and simmer 5 minutes. Add the greens and simmer uncovered 5 minutes until greens are tender and the color of jade. Mix in remaining tablespoon of oil and taste the soup to see if it needs more salt or pepper (I did not do this and it was a mistake).

For the Portuguese Sweet Bread, I decided to try a recipe on-line instead of the one in the book. I found many recipes on-line and many of them were the same and had lard--since I didn't have lard, I looked for a recipe without it and found this one on Cooking with Elise: Massa Sovada Traditional Portuguese Sweet Bread. I cut the recipe in half and we tried to make it with Easter eggs instead of brown eggs. I definitely did not add enough flour for the recipe. As a result our eggs slid out of the bread and we had issues.

Massa Sovada or Portuguese Sweet Bread (adapted from Cooking With Elise)
5 cups of flour
1 1/2 tablespoons of active dry yeast and 1/2 teaspoon sugar
5 large eggs at room temperature (take out at least 2 hours ahead)
1/2 cup unsalted butter
1 teaspoon canola oil
1/2 cup almond milk
1/2 teaspoon salt (just a pinch if you use salted butter)
1 1/8 cup sugar
zest of half lemon (I used more an it was very lemony)
egg wash (one egg and a splash of milk)
3 Easter eggs or brown eggs

In bowl dissolve your yeast in 1/2 cup of water with the 1/2 teaspoon of sugar. Allow your yeast to proof.

Beat the eggs until they are light and fluffy. Add your yeast mixture and just enough flour to make a batter (1 cup at most). Cover with a dish cloth until bubbles form (we added too much flour and did not really get bubbles). Meanwhile melt the butter over low heat. Add the canola oil. When all the butter is melted add the milk, salt and lemon zest.

When batter has formed bubbles add the sugar and butter mixture. Add the remaining flour one cup at a time mixing well each time. This is a sticky dough. When it becomes difficult to stir (if you are not using a mixer) add the remaining flour by kneading it in until the dough is smooth and not too sticky. (Since we used our mixer, we let the mixer do the kneading and our dough was too sticky. I should have added more flour.)

Cover your dough with waxed paper and a towel. Let rise until it doubles in size (about an hour).

Shape loaves of bread into the size you want and place them in buttered loaf pans. (Our dough was so sticky, it could not be shaped, so I put it into a buttered loaf pan). If baking with eggs add them now. Cover with buttered wax paper and a towel and let rise until it doubles in size (we did not have room for it to rise to double its size). Brush the loaf with the egg wash (we call this painting).

Bake for an hour at 275 degrees.

Now when I took ours out after an hour, it was obvious it needed to be baked more. I put it in and two of the eggs slid out. Since our dough was too liquidy it took some of the color off the eggs. I would use the brown eggs if I repeated this.


However Hazel and I loved the bread. Steve did not. I ran out of white flour and used some whole wheat, so I think it is a bit browner than usual as well.

Around the World in 12 Dishes: Iceland--Skonsur

This month starts a new season of Around the World in 12 Dishes! One of the biggest changes is that we are trying to all post on the third Monday of the month and Around the World in 12 Dishes has its own blog with an intro to the country also being posted on the third Monday of the month. I wrote this month's introduction, so be sure to check it out. I will not be sharing about the country here since it is already on the blog for Around the World with 12 Dishes



Our first stop this year is Iceland! Now my sister happened to travel to Iceland this summer, so I have a few of her pictures to share with you! It looks so beautiful there. It makes it hard to believe its name is Iceland, however having read a bit about it, the country was named after an explorer spent a tough winter there. 



When looking for a recipe from Iceland, I discovered it was not going to be easy for us. Their main foods seem to be fish (Steve and I don't like it) and lamb (we don't like lamb either). However I found this great site full of Icelandic recipes.  I showed the recipes to Hazel, well I read the English names to her and let her pick one. She decided on the Skonsur or the thick pancakes/pan-fired bread. 



The recipe was in grams and milliliters, so I pulled out our scale to measure the dry ingredients. Hazel measured the flour for me. I am converting the recipe into cups since that is what we usually use.


Skonsur (adapted from Jo's Icelandic Recipes

  • 2 cups whole wheat flour
  • 4 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1/4 cup butter or margarine, melted
  • 1 cup milk (we needed a bit more)
  • 2 eggs 
Mix the dry ingredients together. Add the eggs and melted butter and stir. Thin with the milk. Stir until smooth.

Pour on a greased skillet and fry on both sides at low temperature. Cakes should be like thick pancakes.

Serve cold with any kind of topping that is good with bread.

Hazel helped with the cooking, but the batter was so thick it was hard to get into the pan. While they were still warm, Hazel and I split one to taste. It tasted pretty much like our normal pancakes, but a bit different. Then we made sandwiches with them for lunch.


Steve made a sandwich the next day and liked them as well. Overall a success!

We also have been reading books about Iceland. I shared these in the introduction post, but will share them here as well.




Hazel has been asking if we can do this for every country around the world, so stay tuned. Oh and she wants to do every state as well. We may be busy with this idea.

March Happenings


This month promises to be a good one. However the beginning is a bit crazy. A good friend has her young son (less than one) in the hospital, and I have been helping with her older son's care, so if I miss a few days this week you will know why. This month will be filled with fun activities, crafts and reviews plus a giveaway!! I know I am excited for spring and cannot wait for it to get here. We will continue our Hawaii escape posts until then. I am also looking forward to Easter and the preparation of it with Lent. We will also continue our Friday Fruit Explorations and Hazel has been asking to do some under the sea discoveries, so expect to see some of that as well. It is so fun to have her at an age where she is asking questions about things and we can do some research together on them.



Now for our monthly clubs and posts. This month  for Virtual Book Club for Kids, the author is Marcus Pfister. Do you know his books? They are amazing. The first book I was introduced to of his is The Rainbow Fish. My sister had given it to us as a hand-me-down. She had bought it for my nephew when he thought he should be given things by strangers because of his cute looks. It is the perfect book to deal with that issue. So many of Marcus Pfister's books help teach life lessons. A little about Marcus Pfister: he was born in Bern, Switzerland and still lives there. He became a graphic artist. In 1986 his first book, The Sleepy Owl, was published. Then in 1992 when The Rainbow Fish burst into the international book scene, he stopped his work as a graphic artist and focused solely on his book authoring career. (Source)


Hazel and I have been enjoying so many of his books and we are having a hard time choosing which one to pick for the club post. It will be one on this collage though.

March begins a new season for Around the World in 12 Dishes. It is hard to believe we have been through a year of it already. We had so much fun joining in this journey, that we have signed up for another year. Here is this year's schedule:



Our first stop is Iceland! This summer my sister happened to take a trip to Iceland, so I have a few of her beautiful photos to share!!



I also wrote an introduction to the country for the Around the World in 12 Dishes blog, so I will not be sharing as much of the country's background here and will just provide a link for you to the introduction. That will give me more space for our crafts and such. Here is the cover for this season's passport pages. You can begin your exploration of Iceland with the placemat and passport pages. Around the World in 12 Dishes-- Canada


This month we are exploring Canada with the Around the World in 12 Dishes group. Hazel and I have been having so much fun with it. If was warmer weather, I might even consider taking her to Canada, however I cannot imagine going anywhere colder and snowier than what we already have. I am so done with winter, but alas, we are expecting snow again tomorrow. Anyway, a bit about Canada. Canada borders three oceans: Atlantic, Pacific and Arctic, and its southern border with the United States is the worlds longest land border between two countries. Canada is the second largest country in area. Canada was settled by both France and Great Britain. After the French and Indian War, France ceded its colonies to Britain in 1763. As a result of both countries settling, Canada is officially a bilingual country. Canada is a federal parliamentary democracy and a constitutional monarchy with Queen Elizabeth II as its head of state. The Queen's representative carries out most of the federal royal duties in Canada.

February Happenings: Paul Galdone, Canada and Black History Month


With the busy start of February, I have not had a chance to preview the month for you. February brings some added events such as Valentine's Day, Presidents Day and Black History Month. We have joined some other great members of Multicultural Kid Blogs to bring you the Black History Month Blog Hop. We have already shared posts on Thurgood Marshall and the song We Shall Overcome. For Valentine's Day we have shared a simple sewing project of a felt heart so far.

Another event coming up this month is:
 International Book Giving Day is an initiative aimed at increasing children's access to and enthusiasm about books. To participate you donate or give books to children either ones you know or a charity or a classroom or library. Will you join us is celebrating?

For Virtual Book Club for Kids the author this month is Paul Galdone. Now most people know something of Paul Galdone's work since so many of his titles are classic stories. He illustrates them and tells the traditional tale. We will be sharing a Galdone book next week with you!!

For Around the World in 12 Dishes, we will be exploring Canada. This will be the twelfth country we have explored in this series!! We have had so much fun exploring the countries. Hazel is always asking where we will be exploring the next month. The new season begins in March. I hope you will join us exploring our neighbor to the north with food, stories, music and more!

Around the World in 12 Dishes--Peruvian Purple Corn Pudding

This month we are exploring Peru with Around the World in 12 Dishes. Now for Peru, I e-mailed my friend, Daria for recipe advice. Daria actually lived in Peru for part of her childhood. She suggested we make a mazamorra morado or Peruvian purple corn pudding. She even suggested a recipe for us. But before we get into our delicious recipe, let's talk about Peru. Now we discussed a little of Peru awhile ago when we reviewed Daria's A Child's Life in the Andes and the companion CD Little Songs of the Andes. Both are available for sale at Daria's Little Village Store.











Peru is a country in western South America and was home to many ancient civilizations including one of the oldest in the world, Norte Chico, and the Inca, the largest state in Pre-Columbian America. The Spanish Empire conquered Peru in the 16th Century and Peru gained its independence from Spain in 1821. Peru has the peaks of The Andes as well as the rainforests of the Amazon Basin. Spanish is the main language in Peru, however many Peruvians speak Quechua or other native languages. (Source)



Now let's talk about our mazamorra morada. If you want a wonderful scent in your house, I suggest you cook this pudding. I can still smell the sweet pineapple, cinnamon and cloves in the air a day after making it. Now we used this recipe found on About.com. Normally I post my Around the World Dishes on the third Tuesday of the month, however I had some trouble finding purple corn. Daria had suggested a Hispanic market. I called six I found on-line. Only one answered (and one had been disconnected). The one that answered did not have purple corn, so I goggled it and found it at Amazon. I didn't get it until after the third Tuesday and then I had to get the other fresh ingredients.

Mazamorra Morada or Peruvian Purple Corn Pudding



Ingredients:
1 pound dried purple corn
1/2 pineapple (including rind)
1 quince (or a green apple if quince is not available)
1 teaspoon whole cloves
3 cinnamon sticks
1 apple
1 cup dried fruit: prunes, apricots and/or cherries (we used prunes)
1 cup sugar
3 tablespoons corn starch
juice of 1 lime

The first step is to put the dried fruit in a heat proof bowl and cover it with boiling water. Then set aside to cool.

Next put the purple corn in a large pot and add 10 cups of water. Then cut the pineapple into small bite sizes. Put the cut pineapple aside but add the rinds to the pot. Quarter the quince and add it to the pot with the cinnamon sticks and cloves. Bring the water to boil and boil uncovered for about 30 minutes until the water is purple (which it is almost instantly) and the quince is very soft. While it was boiling, Hazel juiced the lime and we took a pineapple break with the other half of the pineapple. It was the first time Hazel liked a fresh pineapple though she did get a hurt tongue from eating too much of it.

Once the mixture is done, strain the liquid and return the liquid to the pot. Throw away the corn, pineapple rinds, cinnamon sticks and cloves. Take 1/2 cup of the liquid and put it in a small bowl with the cornstarch. Set it aside for later. Peel and cut the apple into small bites. Add the sugar, pineapple, apple, dried fruit (strained from the water), and a pinch of salt to the pot. Bring the mixture to a boil and boil for about 20 minutes until the apple is soft. Stir occasionally.

Add the cornstarch mixture and bring to a boil again. Stir constantly for about 5 minutes until the mixture thickens. Remove from heat and stir in the lime juice. Cool. Serve room temperature or chilled. Sprinkle with cinnamon when serving.

We loved it!! Steve thought it was a bit spicy, but he enjoyed it.

We of course enjoyed some stories from Peru. Hazel really loves hearing the different stories from all the different cultures.


We also listened to some Peruvian music with songs from these CDs. 


We also looked at some resource books.


Now a few of these books are craft books. The textile book suggested a Peruvian weaving as a craft. Since we did a weaving recently, I decided not to attempt this right now. We did however try the Peruvian clay whistle from the World Crafts Musical Instruments book. Ours did not turn out well though. (It was suppose to look like the yellow one on the cover.)

Around the World in 12 Dishes: Jamaica

Today we are "traveling" to Jamaica with Around the World with 12 Dishes. As usual we have been exploring Jamaica with stories, books, music and food. We will be spending a little extra time in Jamaica since we are joining a wonderful group of Multicultural Kid Blogs to present Christmas in Different Lands and have chosen Christmas in Jamaica which we will post about on December 23rd! I hope you will come back to learn more about Christmas in Jamaica and a huge thank you to Sherika from Saturday Market in Jamaica who is helping me with my research and giving me some recipes to present this to you!!

Jamaica is an island country in the Caribbean Sea. Christopher Columbus claimed it for the Spanish in 1494. When he arrived in Jamaica there was more than 200 villages of indigenous people living there. The indigenous people are the Taino and the Arawak.  The Taino still inhabited the island when the British took command in 1655.When the British took over, the Spanish colonists freed their slaves and left. The slaves joined the Taino in the mountains. The group was called the Maroons and they fought the British throughout the 18th century. Under British rule Jamaica became the world's largest sugar exporter as well as the largest slave-dependent country. After the abolition of slavery, the British brought in Indian and Chinese indentured servants to do the work. Their descendents still live there.

In the beginning of the 19th century the ratio of black people to white people in Jamaica was 20 to 1. Jamaica gained its independence in 1962. It is a parliamentary democracy and a constitutional monarchy. Queen Elizabeth II is the ruling monarch and head of state. Her appointed representative in the country is the Governor-General of Jamaica, currently Sir Patrick Allen.

The climate in Jamaica is tropical. The official language is English. However Jamaicans speak an English-African Creole language known as Jamaican Patois. Reggae music originated in Jamaica along with some other types. Reggae music helped spread knowledge of Jamaican Patois.

Ok, now onto our recipe. We made Sweet Potato Pone. The book, Cooking the Caribbean Way by Cheryl Davidson Kaufman said it was a popular dish for Christmas morning, but all the references I have seen on-line say it is a favorite dessert. I, of course, returned the book  by mistake before making it, so we used a recipe I found on-line at Real Jamaican Vacations.

Sweet Potato Pone
1 lb sweet potato, grated (this is about one large sweet potato)
1 cup flour (we used gluten-free)
1 cup evaporated milk
2 cups coconut milk (we used canned)
1 1/4 cups brown sugar
1 tsp ginger
1 tsp cinnamon
1 tsp vanilla
1/2 tsp nutmeg
1 cup grated coconut
1 cup raisins
2 tbsp margarine


Combine sweet potato with milk, sugar, flour and spices. Mix well. Add raisins, coconut and margarine. Mix thoroughly and taste for sweetness. Add more sugar to taste. Pour into a greased baking pan and bake at 370F for approximately 1 hour, or until center is set.It took 70 minutes for us.




At first we tried shredding our sweet potato. However after we mixed it all together, I realized it need to be finer. At this point Hazel had lost interest (well more like lost energy due to being sick), so I put it back in the food processor all mixed together and got it more grated instead of shredded. This seemed to do the trick. Hazel helped peel the sweet potato and shred it. Then she helped measure (including packing the brown sugar down) and stir it all together. We had to pretend we worked in a restaurant which apparently needs new employees since she kept going off to talk to the ones not doing their jobs. Oh, the imagination of an almost five-year-old. Hazel said she liked the pone, but did not eat much of it. Of course she didn't eat much of anything that day since she was sick. Steve and I both liked it a lot.

Then we enjoyed stories from these books. Hazel especially liked the Anansi stories. It is funny the difference a year makes. She did not like the Annasi stories when we read some of them from Africa.



Finally we found some Jamaican music to enjoy on these CD's. Much of the music is reggae or calypso, but it is fun music!
